Summer Palace

Awarded Michelin one-star, savour classic Cantonese dishes and an extensive selection of dim sum delicacies at Summer Palace, lauded time and again for both its exquisite cuisine and traditional oriental interior. Inspired menus by the restaurants two Hong Kong chefs are complemented by a collection of fine Chinese art and antiques. Besides à la carte and set menu options, Chef's five-course lunch and six-course dinner menus are also available. For private business and social functions, two private dining rooms are available.

Summer Palace’s newest menu features exquisite ingredients imbued with cooling properties. Refreshing pear, reviving winter melon and nourishing watercress are artistically incorporated with premium produce such as dried scallops, hokkigai clams and organic black garlic by Chinese Executive Chef Liu Ching Hai, for dishes that are a delight to tuck into while beating the balmy heat.

Specialising in classical Cantonese and focused on the use of fresh seasonal quality ingredients, Executive Chinese Chef Liu Ching Hai offers weekly rotational of the menus featuring his signature wok-fried dishes, traditional dim sum delights and a selection of nutritious double-boiled soups. Available for both lunch and dinner.

Pearl (seats up to 12)

Decorated with intricate Asian armoire and its own lounge seating area, Pearl, is the perfect venue for smaller, more intimate occasions. Expansive glass windows allow guests to bask in the natural daylight or embrace the romantic evening ambience while enjoying a menu of classic Cantonese; promising a truly memorable gathering. Ideal for birthday celebrations and business meetings.


Jade (seats up to 50)

With floor-to-ceiling glass windows peeking over lush greenery and delicate oriental decorative details, Jade, provides a spacious and serene venue for lunches and dinner functions. Bold red patterned carpet lends a stunning contrast to the wood panelling of the room, while delicate 19th century Chinese porcelain vases with flower motifs and carved lacquer furnishings embellish it with harmonious grandiose. Ideal for birthday celebrations, solemnisations, social/corporate events and business meetings. 

Private dining rooms require pre-booking confirmed by the Hotel. Customised menus, LCD projector and screen can also be arranged upon request (fee applies).

Liu Ching Hai, Executive Chinese Chef

Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the "aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes", expect a uniquely memorable dining experience at Summer Palace.

Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu's repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association. Chef Liu's cooking philosophy stems from bringing diners Canton comfort using the freshest quality ingredients, presenting innovative creations with nuances of traditional Cantonese flavours.
